Ramps (wild leeks) are a curious pleasure that is unique to Spring. Much like I wait for truffles and playoff baseball in the Fall, I eagerly anticipate ramps when the weather turns warm and Spring arrives. Ramps have this fantastic earthy and garlicky quality to them. They work amazingly well in pastas, and I also love to saute them and add them to roasted chicken seasoned with a touch of lemon and pepper. I decided to pair Morgan Twain-Peterson's Bedrock Wine Co. Ode to Lulu Rose 2012 with the chicken and ramps. I love his rose - this year's offering is sourced from old-vine Mourvedre (planted in 1888 and 1922) with a touch of old vine Carignane. The rose was delicate, with high-toned aromatics and tons of perfume and a beautiful structure. A true pleasure to drink! |
